GRILLING CALAMARETTI
A Portuguese Recipe
INGREDIENTS
1 lb cleaned calamari ( bodies sliced into rings) 2 1/4 cups extra virgin olive oil 6 cloves garlic minced 1 onion chopped 1 cup dry white wine 3 Tbsp chopped fresh cilantro 5 cups low sodium chicken broth 24 Piquillo peppers sliced 1 15oz can of diced tomatoes (undrained) 1 6oz can tomato paste 1 1/4 tsp smoked paprika 1/2 tsp salt 1/4 tsp black pepper
INSTRUCTIONS
In a large saucepan over medium-high heat, warm olive oil. Add onion and sauté 4 minutes or until translucent. Add garlic and sauté 30 seconds or until fragrant. Pour in white wine and let simmer 2 minutes or until reduced by half. Stir in chicken broth, Piquillo peppers, tomatoes with their juices, tomato paste, smoked paprika, salt, and pepper. Bring to a boil, reduce heat, and simmer 15 minutes or until sauce has thickened.
Add calamari rings and simmer 5 minutes or until cooked through. Stir in cilantro, serve immediately over rice.
